High-Fibre Chocolate Easter Pancakes

What You Need
Pancakes:
60g oat flour
1 egg
1 mashed banana
1 heaped tablespoon of cocoa powder
A few drops of vanilla
80ml almond milk
8 squares of Cadbury mini egg chocolate
Toppings:
Frozen berries
Mini eggs
Method
Add all of the pancake ingredients (except the chocolate) to a bowl and whisk until fully combined.
Heat a pan with coconut oil and spoon in four circles of mixture.
Add one square of the chocolate to each pancake to create a gooey centre. Cook evenly on both sides and flip.
Stack your pancakes and add as many toppings as you like.
