
For many of us, the lead up to Christmas means overindulgence, especially when it comes to baking.
We’ve asked our Ambassador Sophie Danvers to share her Cinnamon Protein Cookies recipe. These delicious bakes are vegan-friendly, gluten free and full of protein, helping you to focus on your goals throughout the festive season.

Cinnamon Protein Cookies Recipe

What You Need
50g vegan Butter (melted)
150g caster sugar
100g gluten free plain white flour
1tsp vanilla essence
25ml plant-based milk
- 25g
Myvitamins Soy Protein Isolate
(Vanilla flavour) ½ tsp baking powder
½ tsp baking soda
Pinch of salt
2 tsp sweet cinnamon
Extra light brown sugar and cinnamon for topping (optional but recommended)
Method
Preheat the oven to 350 degrees F/ 180 degrees C.
Line a baking tray with parchment paper.
In a bowl, mix the butter and sugar together until creamy and smooth.
Add the rest of the ingredients and mix well, ensuring there are no lumps in the batter.
Use a heaped teaspoon to roll the mixture into balls. This mix makes around 8 cookies.
Place the balls onto the baking tray and press down with your hands or a folk. Sift more sweet cinnamon over the top of the cookies and add the light brown sugar before going in the oven. Bake for 8-10 minutes or until lightly golden brown.
